what is a good Substitution for Roquefort or gorgonzola cheese?

I want to make this recipe
Steak with Roquefort sauce
4 beef grilling steaks
1/3 c minced shallots
1/4 cup brandy
1/3 cup roquefort or gorgonzola cheese crumbled
1/4 cup chopped fresh chives

I am not big on blue cheese’s taste and Roquefort and gorgonzola cheeses are similar to blue cheese. I like pretty much every other type of cheese but am unsure on which cheese to pair with this sauce.

Well, feta has a similar consistency, but a milder taste!

Try goat cheese, Fontina, Smoked mozzarella,even Provolone might work, these cheeses are all soft, and flavorful. (you’ll want something soft).

your going to need to use feta cheese. Provolone and mozeralla cheeses do not melt well, and will not blend into the sauce. They will gum up and form a huge wad. This recipe calls for blue cheese as it is meltable and pairs with the other ingredients well. It is also a salty cheese. I’d do feta.
If you can find it, White stilton is milder and has no green mold like traditional blues. Goats cheese is going to have a strong to mild but always pungeant taste.
