Go to and search under marinade and beef recipes. There are lots to choose from. This is a great site for everything.

3/4 cup olive oil
1/3 cup sherry vinegar
1 large shallot, chopped
1 clove of garlic, chopped
3 tbsp. each of fresh rosemary, sage, and thyme, chopped
salt & pepper to taste
Run the above mixture through a blender until smooth
pour into a large ziplock bag
add the meat, coat well
close bag tightly and place in a large bowl
refrigerate overnight
