I want to make this recipe
Steak with Roquefort sauce
4 beef grilling steaks
1/3 c minced shallots
1/4 cup brandy
1/3 cup roquefort or gorgonzola cheese crumbled
1/4 cup chopped fresh chives
I am not big on blue cheese’s taste and Roquefort and gorgonzola cheeses are similar to blue cheese. I like pretty much every other type of cheese but am unsure on which cheese to pair with this sauce.

I’m kind of looking for a crockpot recipe (like a beef burgandy). Something easy without too many ingredients so that I can finish up cleaning after the holidays without having to stop and cook a huge dinner.

Will this go well: Steak au Poivre and Mulled White Wine Sangria?

Steak au Poivre (beef tenderloin steak with pepper) is served with a cognac sauce (see FoodNetwork recipe: http://www.foodnetwork.com/recipes/tyler-florence/steak-au-poivre-recipe/index.html).
The Mulled White Wine Sangria is just that…white wine, fruit juices, whole cinnamon & anise, garnished with fruit slices.
I’m not a wine person…will this be a weird combo or a good one?
