I’m planning on cooking tuna steaks for the first time. I’ve found that most people leave the center of the steak rare, but is there any harm to the flavor or the texture if it is cooked throughout? I don’t mind medium rare in a beef steak, but I don’t know if I can eat it like that when it comes to fish. Any thoughts or suggestions? (if you have a recipe – feel free to share. I’m set with some rosemary potatoes and string beans, but I don’t know what to do with this steak. I’m fond of a slab of medium-rare beef, and don’t want to be stuck with something too boring. I ended up getting it from Wal-Mart, so I don’t need to put any extra salt in.

What are some simple steak recipes? I’d rather not have to deal with broiling and cleaning the broiler pan later, but it’s not impossible.

if it’s any help knowing, we usually eat roast beef/corned beef, chicken and broccoli pie, stewed beef, chicken in breadcrumbs, pan-fried fish and steak. [as you can tell, they're big into beef, but it'd be nice to get away from all those cows!]

I know of a few store-bought marinades that turn beef into mush (oops! should have believed them when they said no more than an hour) in a few hours, so it doesn’t seem so outrageous to think there’s something home made that will tenderize something over night, but I can’t find anything or even a “secret” ingredient that will do it?
